Try something different! When I’m in a pinch and my money is funny, I buy the frozen mussels and spruce them up a bit. The savory flavors of sautéed mussels enhance the richness of the mac and cheese, creating an unlikely harmony of textures and tastes.
🦋makes about 4 servings🦋
Ingredients
* 2 lbs store-bought frozen mussels, garlic butter
* 4-6 garlic cloves chopped
* 1/2 onion, diced
* A small amount of red, green, yellow bell peppers diced
* Some olive oil for sautéing mussels
* 4 tablespoons unsalted butter
* 4 cloves garlic, minced
* 1 teaspoon red pepper flakes (optional)
* 1 cup heavy cream
* 1 cup shredded sharp cheddar cheese
* 1 cup elbow macaroni
* Salt and pepper to taste
* Fresh parsley, chopped (for garnish, optional)
Steps
1. In a medium-large pot, add some olive oil (not much) and add veggies and sauté until soft. Then add frozen mussels along with the sauce that’s in the bag. Cook for about 8-10 minutes or until mussels are opened up, stir them every now and then. Leave in pot on low heat or add to a warming zone on stove until ready to serve. When ready to serve, you can add to a bowl with some of the juices and some hot sauce or remove with a slotted spoon and add to plate with the macaroni and cheese.
2. Make your Mac n cheese your preferred way OR
3. Bring salted water to a boil and cook elbow macaroni until al dente, about 7-8 minutes. Drain and set aside. You can do this step while the mussels are cooking.
4. In a separate pot, melt butter over medium heat and add garlic. Sauté for 1-2 minutes until fragrant, then stir in red pepper flakes and some of the juice from the mussels, then add heavy cream and bring to a gentle simmer. Stir in shredded cheddar cheese until melted and smooth.
5. Combine cooked macaroni with the cheese sauce and mix well. Season with salt and pepper to taste. Adjust seasonings as needed.
6. Plate the creamy macaroni and top with garlic butter mussels. Garnish with fresh parsley & hot sauce. Serve immediately.
