i keep seeing all this about big leaves and I just don't have the room for that, I don't want bigger leaves, so no moss pole for me

Expect fungus gnats. I got rid of all my moss poles for that reason and put my babies on trellises.

How do the leaves get so big?

Pretty sure size of leaves has a lot more to do with power of the light source, not the aerial roots in the moss pole, as many simply use a blank of wood to encourage the upward growth instead of a moss pole.

Does the kind of pole you use make much of a difference? For instance would it be better to use a moss pole like that as opposed to the coir ones or even just a trellis? I have an Adansonii and a Monstera Ginny I'm trying to be the best plant parent for.

Could I just use bamboo? I know the roots would not grow in the bamboo but I prefer bamboo.
