There's something more comforting about watching hand sewing when the fabric is darker, and given that a fair amount of your content aren't tutorials, I wouldn't worry about perfect visibility etc that comes with sewing darker materials.

Oh I feel this so much. I genuinely try to wear other colors and I really do like them but black is just what I'm most comfortable and confident in. For whatever reason that may be.

Honestly, as someone just learning to sew, I would rather watch you sew the things you want and see the genuine joy you have after you have finished. I can learn the techniques you use because of the magic of cameras.
